<p class="wp-block-paragraph">전문가모드 브루잉 은 엘지 홈브루가 가지고 있는 가장 큰 장점이다. <br>맥즙, 홉오일, 효모, 플레이버를 내가 원하는대로 조합하여 맥주를 만들 수 있기 때문이다. </p>

<h3 class="wp-block-heading">전문가모드 브루잉 시작하기 전 간단 설명</h3>



<p class="wp-block-paragraph">전문가모드는 <a href="https://beerbrained.com/lg-%ed%99%88%eb%b8%8c%eb%a3%a8-%ea%b0%84%ed%8e%b8%eb%aa%a8%eb%93%9c-%eb%b8%8c%eb%a3%a8%ec%9e%89/">간편모드 브루잉</a>(앞의 포스팅 참조)과 다르게 옵션 선택을 할 수 있다. </p>



<p class="wp-block-paragraph">크게 분류해서 선택할 수 있는 옵션은 캡슐 투입 횟수, 발효 후 숙성방법 여부 두가지로 나누어 진다.</p>



<p class="wp-block-paragraph">가능한 옵션선택의 경우의 수는 총 4가지, 미리 준비해야하는 필요 품목은 아래와 같다.</p>



<p class="wp-block-paragraph">1. 캡슐 1회 투입 선택, 별도용기 숙성 -&gt; 맥즙1개, 효모1개, 플레이버 또는 홉 2개, 내압페트병<br>2. 캡슐 2회 투입 선택, 별도용기 숙성 -&gt; 맥즙1개, 효모1개, 플레이버 또는 홉 3개~4개, 내압페트병<br>3. 캡슐 1회 투입 선택, 홈브루 자체 숙성하기 -&gt; 맥즙1개, 효모1개, 플레이버 또는 홉 2개<br>4. 캡슐 2회 투입 선택, 홈브루 자체 숙성하기 -&gt; 맥즙1개, 효모1개, 플레이버 또는 홉 3개~4개<br></p>



<p class="wp-block-paragraph">그리고 전문가 모드 브루잉 레시피는 MY ALE, MY LAGER  또는 기본 키트 레시피도 선택 가능한데 레시피별로 LG Think 앱에서 작성하는 브루잉기록방법이 다르다.</p>

<p class="wp-block-paragraph">기본 키트레시피를 선택하면  키트에 기본으로 구성되어있는 맥즙, 효모, 홉 등이 자동으로 세팅되어 표시되고 추가로 넣는 홉이나 플레이버만 작성할 수 있다.</p>



<p class="wp-block-paragraph"> MY ALE, MY LAGER 레시피는 모든 맥주브루잉이 완료 된 후 내가 어떤 것을 이용해 브루잉을 했는지LG Think 앱에 상세하게 기록이 가능하다. </p>



<p class="wp-block-paragraph">약간 아쉬운 점은 캡슐을 투입한 시점에 바로 기록할 수 없어서 뭘 넣었는지 잊어버릴 수 있다는 것이다. 그래서 나는 맥즙과 캡슐을 투입하기 전 사진으로 기록을 해두고 추후에 앱에서 수정하는 편이다.</p>

<p class="wp-block-paragraph">이번에 선택한 전문가 모드 브루잉은 캡슐 2회 투입, 별도용기 숙성이다. <br>시작은 간편모드와 동일하게 모든 맥주를 다 마시고, 세척을 먼저 진행한다.</p>



<p class="wp-block-paragraph">기계 세척 후 전문가 모드, 캡슐 2회, 별도용기 숙성을 선택 후 최종 레시피를 확인한 후 브루잉 시작.</p>

<p class="wp-block-paragraph">1차 발효가 시작되고 약 5시간 후 2차 캡슐을 투입하라는 알람이 온다. 이때 커버를 열고 효모가 들어가는 노란색은 비워두고 홉오일이나 플레이버를 1개, 또는 2개를 추가하면 된다.</p>



<p class="wp-block-paragraph">나는 처음에는 캡슐을 추가해서 어느정도 향이나 홉의 맛이 배가될지 감이 오질 않아서 1개만 추가했었는데 확실히 2개를 넣는 것이 개성이 더 확실해져서 좋았다. 이왕 추가로 넣는거 팍팍 넣자. </p>



<p class="wp-block-paragraph">2차 캡슐을 넣고 약 8시간 정도 기다리면 캡슐을 제거하라는 알람이 또 온다. 이때 2차로 넣었던 캡슐을 제거 후 화면에 뜨는대로 세척을 진행하면 최종 발효가 시작된다.  </p>



<h4 class="wp-block-heading">4. 별도 병입 숙성 준비하기</h4>

<p class="wp-block-paragraph">별도의 용기에서 숙성을 선택하면 약 10일 후에 맥주가 완성되는데 미리 준비해야하는 것은 1L용량의 내압페트병 약 6개와 설탕이다.</p>



<p class="wp-block-paragraph">내압페트병은 탄산이 빠져나가지 못하도록 특수처리가 되어있는 병으로 일반 페트병과는 다르다. <br>투명한 것도 있지만 왠만하면 햇빛을 차단할 수 있는 갈색, 탄산이 적당히 형성될 수 있도록 병의 사이즈는 1리터를 추천한다.</p>



<p class="wp-block-paragraph">탄산화에 익숙하신 홈브루잉 전문가분들은 유리병을 사용하기도 하지만 나는 깨질까 무서우니 패스. </p>



<p class="wp-block-paragraph">내압페트병 세척은 스타산 이라는 전용 세척제를 쓰거나 깨끗한 물로 여러번 세척을 하는 걸로도 충분하다. 나는 물로 여러번 세척하고 식초로 소독 후 다시 물로 세척해서 사용하고 있다.</p>



<p class="wp-block-paragraph">세척된 1리터 내압페트병에 약6g정도의 설탕을 먼저 넣어 준비한다. </p>



<p class="wp-block-paragraph">설탕의 양은 홈브루 설명서에는 약8L~9L의 맥주당 5g을 추천하고 있지만 효모가 설탕을 먹고 탄산을 만들어내기 때문에 탄산을 원하는 강도에 따라 설탕의 양은 조절하면 된다.</p>



<p class="wp-block-paragraph">설탕을 많이 넣는다고 그대로 모두 탄산화가 되는것은 아니고, 맥주가 달아지는 것도 절대 아니니 양을 가감을 해가면서 본인의 취향을 찾으면 된다.</p>



<p class="wp-block-paragraph">나는 요즘 설탕은 약 10g정도를 넣고 숙성을 진행하고 기분에 따라 설탕의 종류를 바꿔 메이플시럽을 넣거나 하고있다. </p>



<h4 class="wp-block-heading">5. 별도의 용기(내압페트병)에 맥주 추출하기</h4>

<p class="wp-block-paragraph">맥주 병입의 순서는 아래와 같다.</p>

<li>탭을 앞으로 당겨 설탕이 담긴 내압페트병에 맥주를 약 80%~90% 담는다.</li>



<li>뚜껑을 끼우고(돌려 잠그지말고) 손으로 눌러 거품이 바깥으로 살짝 흘러내릴때까지 찌그러 뜨린다.</li>



<li>병이 찌그러진 상태로 끼워진 뚜껑을 &#8216;따다닥&#8217;소리가 날때까지 돌려 꽉 잠가 준다. </li>
</ul>



<p class="wp-block-paragraph">갈색의 병이다 보니 어떤 맥주인지 구별이 잘 가지 않기때문에 라벨링을 꼭 해주는 편인데 맥즙, 효모, 홉오일,플레이버의 종류와 설탕과 맥주의 양, 병입숙성일자, 냉장숙성일자를 써서 표시해주고 있다.</p>



<h4 class="wp-block-heading">6. 전문가모드 브루잉 의 핵심 상온 탄산화 후 냉장 저온숙성하기</h4>

<p class="wp-block-paragraph">맥주를 담은 찌그러진 내압페트병은 원래 병의 모습대로 돌아오고 손으로 눌러 들어가지 않을 정도로 마치 돌처럼 단단해질때까지 상온에서 탄산화를 진행 하면 된다.</p>



<p class="wp-block-paragraph">나는 균일한 온도 유지를 위해 작은 아이스박스에 담아 하고있는데 탄산화가 완성되는 시기는 계절에 따라, 들어있는 설탕의 양에 따라 다르다.</p>



<p class="wp-block-paragraph">보통 일주일정도 생각하면 편한데 여름이 겨울보다 빠르고 에일(14도~25도 내외)보다 라거(4도~12도 내외)가 탄산화가 좀더 느리게 진행된다.  </p>



<p class="wp-block-paragraph">하지만 주변 환경에 따라 변수가 많고, 냉장 저온 숙성을 시작하게 되면 탄산화는 이루어지지 않으니 손으로 반드시 눌러보고 확인 후 숙성을 해야한다.</p>



<p class="wp-block-paragraph">냉장숙성은 온도 3도~6도 정도, 에일은 2일이상, 라거는 7일이상 숙성을 하는것을 권장한다고 한다. </p>



<p class="wp-block-paragraph">방금 숙성을 끝낸 신선한 맥주도 당연히 맛있지만 숙성이 될수록 맛이 달라지고 안정화가 되어 더 맛있어질 수 있다니 충분히 숙성 후 개봉 시기를 달리해 맛의 변화를 느껴보는것도 추천한다.</p>



<p class="wp-block-paragraph">나는 맥주전용 냉장고를 가지고 있어서 온도를 약 3도에 맞춰두고 전문가모드로 만든 홈브루 맥주를 여러병 숙성하고 있는데 개봉 시기마다 더 맛있어지기도 하고, 진해지기도 한다.</p>



<h4 class="wp-block-heading">7. 홈브루에서 맥주를 다 추출하고 난 후에는?</h4>



<p class="wp-block-paragraph">탄산화를 하기 위해 홈브루에서 맥주를 병에 담고나면 간편모드처럼 맥즙을 제거하고 세척 후 바로 다음 맥주 브루잉에 들어갈 수 있다. </p>



<p class="wp-block-paragraph">그래서 보통 기계숙성을 하면 숙성기간까지 포함된 제조기간 14일, 마시는 기간 까지 해서 길게는 한달에 한번 맥주를 만들까말까 하지만, 전문가 모드로 하게되면 홈브루는 거의 10일에 한번은 제조가 가능하다.  </p>

<p class="wp-block-paragraph">아, 그리고 기계숙성을 해서 내압페트병에 보관하는것은 추천하지 않는다. <br>이미 기계에서 숙성이 잘 된 맥주를 다시 탄산화와 냉장숙성 하는 것은 기간만 늘릴뿐 의미가 없기때문이다. </p>



<p class="wp-block-paragraph">기계에서 잘 숙성되어 만들어진 것은 탭에서 바로 따르는 맥주의 맛 그대로 즐기자.</p>

<h2 class="wp-block-heading">만드는 재미가 쏠쏠한 홈브루 전문가모드 브루잉</h2>



<p class="wp-block-paragraph">사실 내가 애정하는 술전용 냉장고인 beerbrained no 2.는 홈브루 전문가모드로 만든 냉장숙성맥주 를 보관하기 위한 목적으로 구매를 했다.</p>



<p class="wp-block-paragraph">술전용냉장고이다 보니 홈브루 맥주를 일주일에 한번씩 신나게 만들어도 충분히 보관이 가능하고, 냉장 숙성 온도도 홈브루맥주에 맞춰 저온으로 유지할 수 있고, 다른 음식냄새도 나지 않아 너무만족스럽다.</p>



<p class="wp-block-paragraph">브루어리투어를 다니면서 쟁여오는 맥주들을 보관하기에도 완전 최고다.  </p>

<p class="wp-block-paragraph">요즘.. 사실 감기가 된통 걸려서 거의 먹지 못하고 기계숙성으로 만들어 조금씩 탭으로 마시고 있었다. <br>당연히 브루어리 투어도 가지 못해 쟁여둔 수제맥주들만 마시고 있었더니 술장고가 텅텅 비어버렸다.  </p>



<p class="wp-block-paragraph">설이 지나면 케스케이드 홉오일을 추가로 구매해 소풍라거 브루잉을 시작으로 세션IPA, 아메리칸위트 등 계속 전문가모드 개별 병입숙성으로 브루잉할 예정이다. </p>

<h2 class="wp-block-heading">lg 홈브루 맥즙 활용 &#8211; 남은 맥즙도 다시보자</h2>



<p class="wp-block-paragraph">lg 홈브루 맥주를 다 마시고 기계 세척을 하고나면 반드시 나오는 것이 있다. 바로 맥즙팩.<br><a href="https://beerbrained.com/%ec%97%98%ec%a7%80-%ed%99%88%eb%b8%8c%eb%a3%a8-%ec%82%ac%ec%9a%a9%eb%b2%95-1%ed%8e%b8-%ea%b0%84%ed%8e%b8%eb%aa%a8%eb%93%9c/" target="_blank" rel="noreferrer noopener">간편모드 브루잉</a> 할때 홈브루 기계 왼쪽에 넣었던 그 하얀색의 봉투다. </p>



<p class="wp-block-paragraph">홈브루맥주는 기본적으로 이 맥즙팩에 담겨 숙성되고 보관된다. 다 마신 후 새로운 맥주를 만들기 위해서는 이 맥즙팩을 제거해야하는데 꺼내보면 생각보다 많은 양의 물이 아.. 아니다. 맥주가 출렁거리면서 만져진다. 그냥 버리기엔 아깝다. 매우. 정말. 진심으로!!</p>

<p class="wp-block-paragraph">그래서 홈브루 이용자들은 보통 이 맥즙을 이용하여 수제맥주를 더 만들거나,<a href="https://namu.wiki/w/%EB%9D%BC%EB%93%A4%EB%9F%AC" target="_blank" rel="noreferrer noopener"> 라들러</a> 같은 맥주베이스의 음료를 만들거나 하고있다.  </p>



<p class="wp-block-paragraph">사실 맥즙을 이용하는 방법은 완전 무궁무진하다. 왜냐하면 내가 원하는 재료를 첨가해서 내가 원하는 방향으로 만들면 되기 때문! 이또한 홈브루잉의 묘미 중 하나라고 생각한다.</p>



<p class="wp-block-paragraph">이번에는 가장 기본이 되는 수제맥주 1병 더 만들기와 라들러만들기 총 2가지를 해볼까 한다.</p>

<h2 class="wp-block-heading">홈브루 맥즙 이용하여 수제맥주 1병 더 만들기</h2>



<p class="wp-block-paragraph">맥주를 1병 더 만들어내는건 정말 간단하다. 맥즙을 통에 잘 담아 콜드크래싱 이라는 과정을 거쳐..음.. 어려운 용어는 그만두자. 그냥 냉장고에 넣고 맥즙 찌꺼기가 잘 가라앉을때까지 두면 된다. </p>



<p class="wp-block-paragraph">그리고 갈색(햇빛차단)의 내압페트병(탄산이 나가지 않는)을 소독해두고 탄산을 만들어내는 설탕을 함께 미리 준비 해둔다. 이때 설탕의 양은 1리터 페트병당 6g정도가 적당하다.</p>



<p class="wp-block-paragraph">약 일주일가량 건드리지 않고 이 맥즙을 냉장고에 보관한다. 이대로 두면 흙탕물같던 맥주가 점점 맑은 색의 물과 연한 갈색의 진흙같은 것이 분리되어 가라 앉는다. 그럼 설탕을 먼저 페트병에 담고 윗부분의 맑은 맥주만 살살 따라 넣는다. 세게 콸콸 넣으면 애써 가라앉혔던 부분이 올라오니 살살.. 천천히 따르는것이 좋다.</p>

<p class="wp-block-paragraph">다 넣은 후 페트병을 눌러 찌그러트리고 뚜껑을 따닥! 하고 잠기는 소리가 날때까지 꽉 닫아준다. <br>여기서 쓰는 내압페트병은 탄산이 나가지 않게 하는 특수처리가 된 페트병이다. 일반 페트병과는 다르니 반드시 내압페트병을 쓰는것을 추천.</p>



<p class="wp-block-paragraph">그리고 상온에 두면 페트병에 넣어둔 설탕을 먹고 효모가 활동을 해 탄산을 만들어내고 이로 인해 찌그러진 페트병이 다시 펴지게 된다. 손으로 눌러도 들어가지 않을 정도로 딱딱해지면 탄산화가 다 되었다는 신호이니 이제 냉장고에 넣어 맥주 숙성을 해주면 된다. </p>

<p class="wp-block-paragraph">탄산화 과정은 여름에는 보통 3일에서 4일, 겨울에는 일주일 정도면 된다고한다. 나는 7월 초부터 만들기 시작했는데 탄산감이 많은 맥주를 좋아해서 보통 일주일씩 플라스틱 아이스박스에 넣고(온도의 균일화를 위해) 탄산화를 시킨 후 냉장보관 숙성을 했다. </p>



<p class="wp-block-paragraph">중요한 포인트는 만들때마다, 계절마다 집의 온도와 보관 상태가 모두 다르니 자주자주 병의 상태를 관찰하고 냉장숙성을 시작하면 된다는 점이다.</p>



<p class="wp-block-paragraph">냉장숙성은 보통 일주일정도 거친 후 부터 마시기 시작한다. 첫 홈브루잉이었던 스타우트의 맥즙을 7월 16일에 냉장숙성시작했고 너무 궁금해 일주일만에 따서 마셨는데, 맥즙으로 만든 맥주가 아니라 그냥 홈브루에서 숙성한 스타우트를 한잔 더 마시는 것 같았다.  탄산도 충분했고 스타우트의 풍미도 좋았다.</p>

<p class="wp-block-paragraph">요즘 나는 일부러 한달가까이 숙성해서 마시고 있긴하지만 신선한 맥주를 즐기기 위해서는 최대한 빨리 마시는것이 권장된다고 한다.</p>

<h2 class="wp-block-heading">lg 홈브루 맥즙 활용 하여 라들러 만들기</h2>



<p class="wp-block-paragraph">라들러는 20세기 초반 독일에서 스포츠마니아들을 위해 청량한 음료처럼 만든 도수가 낮은 맥주라고 한다. 쉽게 말해 맥주에 레모네이드같은 음료를 일정비율(보통은 5:5)로 섞어 가볍게 마실 수 있는 알콜음료이다.</p>



<p class="wp-block-paragraph">나는 사실 홈브루를 접하기 전에는 라들러라는 것은 알지도 못했다. 그러다 맥즙으로 쉽게 만들 수 있다는것을 알고 나서 바로 2번째 브루잉 위트 맥즙이 생기자마자 두가지 버전의 라들러로 만들어보았다.</p>



<p class="wp-block-paragraph">하나는 기본 라들러 버전으로 콜드크래싱 한 맥즙0.4L, 레모네이드600ml, 설탕5g을 넣었다. <br>그리고 다른 하나는 테스트를 할겸 맥즙0.4L, 탄산수400ml, 집에서 만든 수제 자두청40g을 넣었다. </p>

<p class="wp-block-paragraph">탄산이 있는 레모네이드와 탄산수를 넣었더니 페트병이 단단해지는 시기는 3일정도면 충분했다.<br>7월 26일 냉장 숙성 시작 후 8월 12일에 개봉했는데 탄산이 너무 많아 잔에 거품이 절반일정도로 넘쳐났다. 아마도 이미 당과 탄산이 첨가된 레모네이드에는 설탕은 절반으로 줄여도 충분 할 것 같다.</p>



<p class="wp-block-paragraph">맛은 두개 다 확실히 가볍고 탄산도 충분해서 마치 음료를 마시는것 같았다. 레모네이드를 넣은 라들러는 상큼했고, 자두청을 넣은 라들러는 약간 묵직한 맛을 내는 맥주음료가 되었다.</p>



<p class="wp-block-paragraph">아마도 베이스가 되는 홈브루의 맥즙 종류와 첨가하는 음료의 종류에 따라 더운여름에 청량하고 가볍게 마실 수 있는 정말 무궁무진한 맥주음료 제조방법이 탄생 할 수 있을 것 같다.</p>



<p class="wp-block-paragraph">하지만 주의할 것은 이 라들러도 분명 맥주다. 도수가 낮아 음료취급을 받고는 있지만 분명 맥주다.<br>저 두병도 탄산음료처럼 술술 넘어갔지만 취기는 온다. 이건 누가뭐래도 분명한 술이다. <br>음료가 아님을 반드시 명심해야한다. </p>



<h2 class="wp-block-heading">lg 홈브루 맥즙 활용 은 과연 어디까지!</h2>



<p class="wp-block-paragraph">아마도 홈브루 수제맥주를 만드는 한 맥즙은 계속 생길테고, 나는 이 맥즙을 이용한 맥주도 계속 만들어낼 것이다.</p>



<p class="wp-block-paragraph">지금도 위트에일 맥즙으로 메이플 시럽을 넣은 맥주를 한병 9월 9일 만들었고 현재 냉장고에서 숙성중이다. (내가 좋아하는 속초의 한 브루어리의 수제맥주를 오마주해보았다 ㅎㅎ)</p>



<p class="wp-block-paragraph">나는 기계숙성부터 맥즙까지 이용해 홈브루로 만들 수 있는 수제맥주의 세계가 너무 다양하고 넓어서 신기하고 아직은 너무 즐겁다. 게다가 간단하기까지. </p>



<p class="wp-block-paragraph">물론 전문가들처럼 지속적으로 맛있는 수제맥주를 만들어내는것은 당연히 어렵다. 그래도 내가 만들어내는 방식에 따라 맥주맛도 달라진다는 점도 꽤 재미있다. </p>



<p class="wp-block-paragraph">아마도 이게 홈브루잉 수제맥주가 갖는 진짜 매력 아닐까. </p>



<p class="wp-block-paragraph">아, 한가지 더. </p>



<p class="wp-block-paragraph">맥즙 밑에 남은 옅은 황토색의 찌꺼기는 촉감도 정말 고운 진흙같다. 머드팩저리가라다. <br>손과 발에 발라서 팩처럼 써도 보들보들 완전 좋다. 단, 콤콤한 맥주 냄새가 나니.. 참고하시길 ㅎㅎ</p>
